You will lead the larder section across salads, sandwiches, fruit platters, canapés and delivered catering, helping create exceptional food for Sydney’s most exclusive events.

The Role

  1. Lead the day-to-day production of the larder section, ensuring all food meets Fresh’s high standards for quality, presentation, portioning and taste
  2. Produce salads, sandwiches, fruit platters, canapés and catering items to Fresh Standard Recipes
  3. Review weekly internal orders and prepare detailed mise en place lists
  4. Maintain larder par levels and communicate ordering requirements to the Kitchen Manager
  5. Check job sheets, accurately record dry and frozen goods, and ensure every order is complete before dispatch
  6. Brief, guide and supervise larder staff, allocating tasks according to capability and maintaining a productive team environment
  7. Ensure all food is labelled, dated, rotated and stored correctly to minimise waste
  8. Coordinate function preparation, packing and final job checks with the kitchen team
  9. Maintain a clean, organised and food-safe larder section, cool rooms and storage areas
  10. Uphold Fresh’s food safety, hygiene and workplace health and safety standards

About You

  1. Certificate III in Commercial Cookery or equivalent qualification
  2. Previous experience as a Sous Chef, Chef de Partie or senior chef in a high-volume catering, production or events kitchen
  3. Strong larder experience, including salads, sandwiches, platters and canapé production
  4. A sharp eye for detail and commitment to consistent presentation
  5. Confident supervisory skills, with the ability to train, motivate and delegate effectively
  6. Excellent organisation, time management and communication skills
  7. Sound understanding of food safety, hygiene and WHS requirements
  8. A positive, hands-on attitude and genuine passion for great food
  9. Valid full-time working rights in Australia
